The Réserve Caviar de Neuvic is produced in Dordogne. A must in caviar quality.
After extraction, washing, hand sieving and color grading, in a series of meticulous operations reminiscent of the world of high end jewelry, the unfertilized roe (sturgeon eggs) are stored in the original tin. The tins are then sealed and stored in the cold chamber to be used later to fill other smaller, more reasonably sized tins. These original tins contain the freshest caviar available.
The Réserve quality is notable for the perfection of its pearls which are hand sorted by size, potency of aroma and texture retaining only the most beautiful and precious ones. Storm gray, chestnut brown & gilded bronze pearls bring together all the shades of the Reserve caviar and hold the promise of a unique experience. Its crisp and silky texture releases an almost boundless palate of buttery and woody notes.

The piscicultural farm Caviar de Neuvic is situated in Dordogne at the confluence of the Isle – a historical river of the sturgeon production – and of the Vern. The attention is completely focused on the sturgeon’s quality of life, an essential requirement for an exceptional taste.
