Description
The bubbles, either discreet or sparkling, go so well with the infinite scintillations that excite our palates and our spirits, from choreographies and burlesque aspersions of Dita to the never-ending parties of Rich Kids, since the life of gods consists not only of living on a diet of champagne, but also of swimming in it, in cool pools. Which is, we must admit, the pure truth.
Blend: 50% Pinot Noir, 50% Chardonnay. This wine is made exclusively with grapes from the 2005 vintage.
Wine & Food Pairing: Perfect with foie gras on brioche toast, a poulet de Bresse (specialty poultry) with truffles or veal sweetbreads with morels.
The Forget-Brimont Vineyards reach from Mailly-Champagne to Verzenay for the Grand Cru and from Ludes to Taissy for the Premier Cru. Pinot noir, Meunier and Chardonnay: integrated viticulture is practiced.
No insecticides, pheromones against grape caterpillars, fertilizers and organic amendments. Harvesting is carried out manually, with direct pressing of whole crop; the alcoholic fermentation occurs at 17° and the malolactic fermentation in thermoregulated stainless steel tanks. As an illustration of this optimal research in quality, only the cuvees are used for the elaboration of the different types of Champagne, since the crops are not reintegrated. It is aged a minimum of thirty months, in crayères. After the wine dosage, the bottles are left to rest for two months prior to dispatch.
