Forget-Brimont’s bubbles, whether discreet or sparkling, are unfailingly accompanied by an infinite number of scintillations that never cease to excite our palates and minds. Guests at the Ambassade cocktails will confirm this, who each month gather and taste this pure jewel of champagne.
Blend: 40% Pinot Noir, 40% Pinot Meunier, 20% Chardonnay. Selected from the 100 parcels that make up the 18 hectares of the Forget-Brimont estate. Between 20 and 40% reserve wines are used to ensure the good regularity of this Brut Premier Cru.
Food & wine pairing: An ideal Champagne for the aperitif, this cuvée will also go wonderfully with creamy white meats or veal grenadins on vegetables juliennes.
The Forget-Brimont vineyard stretches from Mailly-Champagne to Verzenay for the Grand Cru and from Ludes to Taissy for the Premier Cru. Pinot noir, Meunier and Chardonnay, viticulture is reasoned, it is not an empty word.
No insecticides, pheromones against grape worms, fertilizers and organic amendments, the harvest is manual, the pressing, carried out on the whole bunch, the alcoholic fermentation is done at 17° and the malolactic fermentation, in thermo-regulated stainless steel vats. Ageing is a minimum of 30 months in crayères. After dosage, the wines benefit from an additional 2 months rest before shipping.
